Toast the pine nuts golden in a dry frying pan.
Mix the pasta with the pesto, olive oil and the halved cherry tomatoes.
Fold in the mozzarella and rocket and scatter the pine nuts over the top.
The rocket goes in at the last moment, otherwise it wilts away. Toasted pine nuts, grilled courgette or sun-dried tomato make it fuller. This salad is ideal to take to a birthday or a picnic and keeps two days, though the rocket discolours.
