A toastie with mozzarella has one problem: that ball is full of water, and the water comes out in the pan. So pat the slices dry with kitchen paper and do the same with the tomato. Butter the outside of the bread rather than the pan, and it browns evenly while the pan stays clean.

Spread two slices of bread with pesto and top with slices of mozzarella, tomato and basil.
Put the other slices on top and butter the outside thinly with soft butter.
Fry the toasties golden brown in a hot pan, 3 minutes a side, pressing gently with a spatula.
Cut them across diagonally and serve at once, while the cheese is still melting.
Swap the pesto for a thin layer of tapenade or simply some dried oregano. Basil burns in the pan, so tuck the leaves between the cheese or lay them on after frying. A toastie does not wait: it turns leathery within five minutes, so fry it when everyone is ready.
Or press the button and let it surprise you.
