Cook the macaroni al dente following the packet.
Cut the onion, pepper and ham into small cubes.
Soften the onion and pepper and fry the ham with them briefly.
Add the passata and herbs and let it simmer for 10 minutes.
Fold the macaroni through the sauce and scatter generously with grated cheese.
Chicken or mince can replace the ham, and without meat it works with extra pepper and mushrooms. A handful of grated cheese over the pan and then briefly under the grill turns it into a bake. Leftovers are fine the next day, reheat them with a splash of water.
